That was the first time I’d ever made quiche and I’ve been so thankful I was introduced to it ever since. As someone who has a physical reaction to food waste, I was ecstatic to have a new way to use up veggies in my back pocket. These easy mini quiches are such a sneaky way to use up spinach, tomatoes, bell peppers, and more. You name it, I’ve probably thrown it into a quiche. Once I learned how to make this simple homemade pie crust, I knew this was going to be one of my favorite breakfasts.

Ingredients for the Easy Mini Quiches and Homemade Pie Crust
All purpose flour – To make the crust. You can use any flour you’d like, but I find that AP works best. If you are making crustless mini quiches, don’t worry about this step.
Butter – This is the binding agent for the crust. I recommend using grass fed for the best taste!
Eggs
Sausage/bacon – Any meat you have on hand
Cheese
Heavy cream – this is optional, but if you want a creamy consistency this is the way to go! I’ve also added unsweetened almond milk as a dairy free option.
Any veggies you have on hand!

How to Make the Homemade Pie Crust
I have been making this homemade pie crust for years! When I realized how simple it was, I knew this would be a staple recipe in my kitchen.
Add 1 1/4 cup of all-purpose flour to a mixing bowl. Whisk in one teaspoon of salt into the flour. This recipe calls for kosher salt, but any salt will do.
Cut eight tablespoons of butter into cubes and add it to the flour and salt mixture.
Next, incorporate the butter using a spatula or your hands until the butter is the size of small peas. I use my hands to mix everything.
Gradually add water to form the dough. The dough shouldn’t be wet. I add very little water at a time.
Once you add water, form the dough into a ball.
The recipe I use calls for wrapping the dough tightly in plastic wrap before putting it in the refrigerator. I just used a ziploc bag and it works great!
This recipe calls for leaving the dough in the fridge for one hour. When I do this, my dough is a little hard to roll out. It might be different for you depending on the temperature of your fridge, but I usually leave my dough in the refrigerator between 30 – 45 minutes and I find the dough is a little easier to work with.
Preheat the oven to 400 degrees.
Coat muffin tin with coconut oil and set aside. You can also use avocado oil or butter.
Roll the dough out and mold it to the muffin tin.
Place the muffin tin with the molded dough in the oven for 3 minutes. This will help make sure the crust is cooked all the way through.
How to Make the Easy Mini Quiches
Add eggs to a large mixing bowl.
Whisk together salt and pepper to taste.
Mix in your favorite meat, cheese, and veggies! I added sausage, shredded cheddar cheese, onions, and tomatoes. For extra thickness I added a little bit of heavy cream as well!
Scoop the egg mixture into each muffin tin slot. Leave a little room at the top as they will rise a little.
Cook the mini quiches at 400 degrees for 20 minutes. After 20 minutes poke the center of one of the quiches with a knife or fork. If it comes out clean, the quiches are done!

No. You can absolutely make a crustless version of this. I would recommend coating the tin generously with oil or butter to prevent sticking. You can also use parchment paper or muffin tins.
Not at all! I’ve nixed the cream plenty of times and it is just as delicious!
The dough might not be cooked all the way through which could leave your dough soggy. I recommend cooking the crust a little bit before adding the egg mixture to ensure the crust is flaky and cooked through all the way.
I never have and if turns out fine every time. Using weights is supposed to prevent the crust from forming bubbles while baking. If you want to use weights just in case, but don’t have any, you can use dried beans or rice.
