This simple blueberry and feta salad with oven roasted chicken is the perfect balance of sweet, tangy, and filling. The toppings are versatile and will taste good with any dressing you choose. This salad will be your go-to light and healthy meal for summer!
I loved making this salad as a go-to lunch when I was just starting my career. It was a delicious, healthy meal that saved me a lot of money. Whether you are looking for a great meal-prep idea or a healthier meal for dinner tonight, is a great option for you!
Why You’ll Love This Recipe
Delicious Flavors – The sweetness of the blueberries, the crunch of the pecans and walnuts, and the tanginess of the feta are flavors you would expect in a restaurant salad in my opinion. Everything in this salad compliments each other so well!
Simple Toppings – Part of the reason why I think salads might taste better when someone else makes it is because I never picked the right toppings! This salad takes the guess-work out of thinking about what fruit, nuts, and cheeses go together.
Choose Any Dressing! – I have tried this salad with a garlic dressing, homemade ranch dressing, and sweet vinaigrettes. They all taste great and don’t take away from the deliciousness of this meal.
Tips
- Wash your produce before building this salad. Whether you are buying produce organic or not, always make sure you are throughly washing dirt and pesticides off your fruits and veggies. I use this method to clean all my produce. This makes blueberries last 4 – 6 weeks and lettuce last up to one month!
- Prep your chicken ahead of time. When want to make this quick and easy during a busy week, it helps to have the chicken already cooked at the beginning of the week.
- To avoid seed oils, I will typically make my own dressing for salads. To make homemade ranch dressing I use my ranch dip recipe for the sour cream step. So good!
- If you are making homemade ranch dressing, I’ve found it helpful to add milk a little bit at a time for desired consistency. If I add all of the milk a recipe calls for it turns out a bit watery for me.
- If you are looking for a cost effective meat option I recommend buying a whole chicken and roasting it in the oven. It is much cheaper than boneless, skinless chicken breast.
