Incorporating root vegetables into meals has always been a to-go of mine. I am always cooking meals for 1 to 2 people, so making versatile meals with root veggies works great because they don’t go bad quickly.
Typically vegetables like carrots and potatoes that last a long time on the counter keep well in the fridge. This means this recipe makes great left overs and allows me to make a fun, new dish with the leftovers if I want to.
Why I Love This Recipe
It’s very forgiving – This recipe is kind of hard to get wrong. There are minimal ingredients so if you get the measurements wrong, its not the end of the world!
Easy clean-up – Any recipe made in the oven is my best friend. This means there is no oil spraying everywhere and you don’t have to babysit anything on the stove. Clean-up after dinner will be so easy!
Healthier alternative – Using something like oven roasted carrots is a great way to create well-balanced meals that aren’t so heavy.
Tips
- Wash your carrots well. I use organic carrots and there tends to be some dirt on the outside sometimes. You can also peel them.
- If you substitute the butter for olive oil, add more salt to taste. I’ve tried using olive oil instead of butter and the flavor is a bit more mild.
- Make the garlic butter sauce in a small bowl instead of adding individual ingredients onto the carrots. The flavors will be mixed well and stick to the carrots better.
- Use foil to line your baking dish. This will make the carrots crispy on the outside.
- I use a bit of olive oil on the foil to make it non-stick.

Small frying pan – If you don’t have a microwave like me, use a frying pan to melt the butter.

Lemon zest – I used the zest of one small lemon. Half of a larger lemon works too!
Thyme
Garlic cloves – I used fresh, minced garlic but you can use garlic powder if you don’t have fresh garlic.
Butter
Salt

How to Make Oven Roasted Carrots with Lemon and Thyme
Preheat your oven to 400 degrees.
Line your baking sheet with foil, drizzle some olive oil to prevent sticking later, and set aside.
Wash the carrots and cut them into thin, long slices.
Add the carrots to the lined baking dish and set aside.
Zest one small lemon using a lemon zester or a smaller grate on a cheese grater, and add the zest to the small bowl.
Mince three cloves of garlic into the small bowl.
Add in thyme, salt, and pepper.
While those ingredients sit in the bowl, take the butter and melt it on low heat in a frying pan.
Once the butter is melted add it to the bowl and mix well.
Drizzle the butter mixture onto the carrots and mix well using your hands.
Place the carrots in the oven and roast at 400 degrees for 23 minutes.
Let the carrots cool on a baking sheet for 5 – 7 minutes.
What To Pair with Oven Roasted Carrots
My favorite way to eat this dish is to pair it with a sirloin steak or stew meat and homemade mashed potatoes. You could also add a side salad if you are trying to sneak in more veggies!
